Ingredients

  • Ingredients A
  • 1 1/2 cups mashed sweet potato

  • 1/2 cup butter of choice

  • 2 tablespoons olive oil

  • 3/4 cup fine sugar

  • 2 teaspoons vanilla extract

  • Ingredients B
  • 1/2 cup cocoa powder

  • 1 tsp cinnamon

  • 1/2 cup all purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • Other
  • 1/2 cup dark chocolate chips

Directions

  • In a large bowl, whisk together ingredients A till well combined.
  • Add in Ingredients B and mix till combined.
  • Fold in ¼ cups of the chocolate chips. Pour batter into a lined tray and sprinkle remaining chocolate chips.
  • Bake in a preheated oven at 180C for 30 mins. Leave to cool for at least 1 hour before cutting into them.
