Ingredients

  • 3 tbsp chili paste (from dried chilies, soaked & blended)

  • 6 shallots (blended)

  • 3 cloves garlic (blended)

  • 1/2 inch belachan (SECRET INGREDIENT!)

  • 1 ½ tbsp tamarind paste (mixed with 2 tbsp warm water)

  • 1 ½ tbsp sugar (adjust to taste)

  • Salt to taste

  • • 1 small onion, thinly sliced

  • 4 tbsp oil

Directions

  • Heat oil in a pan. Add chili paste and sautĂ© until oil separates and it darkens.
  • Add blended shallots and garlic. Cook until aromatic and lightly caramelized. Add in *SECRET INGREDIENT
  • Stir in sugar and let it melt into the sambal.
  • Add tamarind paste and mix well. Simmer a few minutes.
  • Season with salt. Adjust sweetness and tang to your liking.
  • Finish with sliced onions—cook until just soft but still with a bite.
  • Store in a jar or serve immediately with rice, eggs, or anything really!
