Ingredients

  • Filling Ingredients:
  • 5 Salted Egg Yolk

  • 90 g Butter

  • 60 g Sugar

  • 50 Custard Powder

  • 50 g milk powder

  • Dough:
  • 500 g Low-gluten Flour

  • 50 g Fresh Milk

  • 200 g water

  • 70 g Sugar

  • 1/2 tsp salt

  • 5 g Instant Active Dry Yeast

  • 5 g Baking Powder

Directions

  • For the filling, steam egg yolks for 10 mins. Mash the egg yolks and set aside. In a bowl mix all the dry ingredients food the filling together. Then rub in mashed egg yolks and butter. Then add water and leave to cool in the fridge for about 30 mins or till solid enough to handle. Separate filling into 30g pieces and roll into a ball.
  • For the dough, mix all the dry ingredients together. Then add in the fresh milk and water which are warm. Mix until you get a soft dough. Leave to rise for 10 mins. Flattenand divide into 50g portions. Flatten and wrap filling with dough. Leave to rise for another 1 hour and 30 mins. Steam on high heat for 8 mins.
