Easy to make pumpkin porridge.

Ingredients

  • 1/2 cup jasmine rice

  • ½ cup pumpkin, cut into large cubes

  • 2 cups hot water

  • 2 1/2 cups vegetable broth

  • 2 -inch ginger, sliced

  • 2 cloves garlic, chopped

  • 1 teaspoon salt

  • Toppings
  • Fried onions

  • Onions

Directions

  • In a pot, sauté ginger and garlic until fragrant. Add all other ingredients. Let it boil and simmer until it becomes porridge.
  • Serve with optional toppings.
