Plant Based Mac & Cheese with dates because why not.

Ingredients

  • Cheese Sauce
  • ¾ cup cashew nuts, soaked in water for 2 hours

  • 1 ½ tablespoons lemon juice

  • 1/4 cup water

  • 1 teaspoon salt

  • 2 tablespoons nutritional yeast

  • A pinch of cayenne/chili powder, turmeric, garlic and mustard

  • 5 dates, seeds removed, peeled and chopped

  • Macaroni

  • Black pepper

Directions

  • Put all the Cheese sauce ingredients in a blender and blend.
  • Cook macaroni according to packet instructions, drain and mix with Cheese Sauce and dates.
