Ingredients

  • For sorbet
  • 2 cups frozen pineapple

  • 2 tbsp coconut milk

  • 1 tbsp maple syrup

  • For syrup
  • 1/4 cup brown sugar

  • Zest of 2 mandarins

  • ½ cup coconut milk

  • A pinch of coarse sea salt

Directions

  • For the sorbet, blitz all ingredients in the food processor until creamy.
  • For the syrup, heat brown sugar till liquid. Slowly whisk in coconut milk and mandarin zest. Season with a pinch of salt.
  • Serve sorbet with syrup.
