2tablespoonlight soy sauce
1/2teaspoonground white pepper
1tablespoonoyster sauce
1/2teaspoonfive-spice powder
1tablespoonginger (very finely chopped)
1teaspooncornstarch

4boneless skinless chicken thighs, cut into cubes
2cupssticky rice (sweet rice), soaked overnight
1tablespoonsdark soy sauce
Oil
1cupsshitake mushrooms, soaked overnight
1cupsscallion, chopped
1/2teaspoonsea salt
Directions
Toss chicken with ingredients A and leave to marinate for at least 30 mins.
Drain the glutinous rice and mix with 2 tbsp of dark soy sauce.
In a wok sauter mushrooms till tender. Set aside. Hen brown the chicken pieces and add in all other ingredients.
Wrap mixture in lotus leaves or put mixture into heat proof bowls. Steam on medium heat for 1 ½ hours.
