Ingredients

  • Ingredient A
  • 2 cups (250g) all-purpose flour

  • 1 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 teaspoon ground cinnamon

  • Ingredient B
  • 1/2 cup (1 stick or 115g) butter of choice, at room temp

  • 3/4 cup (150g) brown sugar

  • 2 large eggs, at room temperature

  • Ingredient C
  • 1/3 cup (80g) milk of choice + 1 tbsp lemon juice

  • 2 cups (460g) mashed bananas

  • 1 teaspoon pure vanilla extract

  • Ingredient D
  • 1/2 cup (60g) chopped walnuts

  • 1/4 cup desiccated coconut

  • 1/4 cup chopped dates

Directions

  • Mix all ingredients B together till smooth. Add in Ingredients A that has been sifted together and Ingredient C. Mix till smooth. Fold in ingredients D and pour into a lined loaf tin. Bake in a preheated oven at 180C for 60 mins or till cooked through.
