Ingredients

  • 10-12 dates

  • Ingredient A
  • 1/3 cup Oil

  • 1/2 cup Milk

  • 1/3 cup brown Sugar

  • Ingredient B
  • 1 cup Whole Wheat Flour

  • 1/4 tsp Cinnamon Powder

  • 1/2 tsp Baking Powder

  • 1/2 tsp Baking Soda

  • 1/4 tsp Salt

  • Other
  • 1 cup Grated Carrot

  • 1/4 cup walnuts (optional)

Directions

  • Soak dates in hot water for 15 mins. Drain and blitz till you get a smooth paste.
  • Mix in with ingredient A. Mix in ingredient B till there are no more lumps.
  • Fold in carrots and nuts.
  • Pour into lined muffin trays and bake for 20-25 mins in a preheated oven at 180C.
