Chicken Feet Soup 0 from 0 votes Cuisine: ChineseDifficulty: Easy Servings4-5servingsPrep time15minutesCooking time3hours Ingredients 8-10 chicken feet (cleaned & nails trimmed)200 g lotus root (peeled, sliced into rounds)1/2 cup raw peanuts (soaked 30 mins or boiled until tender)5-6 dried red dates (jujube)6 cups water Salt (to taste) Directions Prepare chicken feet: Trim nails, rinse, and blanch chicken feet in boiling water for 5 minutes to remove impurities. Drain and rinse with cold water.Cook peanuts: Boil the peanuts first in a pot of water for about 15–20 minutes until slightly tender. Drain.Make the soup: In a clean pot, combine blanched chicken feet, lotus root slices, boiled peanuts, red dates, and 6 cups of water.Simmer: Bring to a boil, then lower the heat and simmer gently for 1.5 to 2 hours, until the broth turns rich and slightly milky.Season & serve: Add salt to taste.
