Ingredients

  • 8-10 chicken feet (cleaned & nails trimmed)

  • 200 g lotus root (peeled, sliced into rounds)

  • 1/2 cup raw peanuts (soaked 30 mins or boiled until tender)

  • 5-6 dried red dates (jujube)

  • 6 cups water

  • Salt (to taste)

Directions

  • Prepare chicken feet: Trim nails, rinse, and blanch chicken feet in boiling water for 5 minutes to remove impurities. Drain and rinse with cold water.
  • Cook peanuts: Boil the peanuts first in a pot of water for about 15–20 minutes until slightly tender. Drain.
  • Make the soup: In a clean pot, combine blanched chicken feet, lotus root slices, boiled peanuts, red dates, and 6 cups of water.
  • Simmer: Bring to a boil, then lower the heat and simmer gently for 1.5 to 2 hours, until the broth turns rich and slightly milky.
  • Season & serve: Add salt to taste. Serve hot as a nourishing, collagen-rich soup.
