Ingredients

  • 500 g beef brisket or shank

  • 500 g daikon radish

  • 3 slices fresh ginger

  • 3 cloves garlic

  • 2 star anise

  • 1 cinnamon stick

  • 2 Tbsp light soy sauce

  • 1 Tbsp dark soy sauce

  • 1 Tbsp Shaoxing wine (optional)

  • 1 tsp sugar

  • 4-5 water or beef stock

  • Salt & white pepper (to taste)

  • Spring onions or cilantro (for garnish)

  • 1 tbsp Cornstarch + 2 tbsp water

Directions

  • Blanch the beef: Place beef chunks in a pot of boiling water for 3–5 minutes to remove impurities. Drain and rinse.
  • Aromatic base: In the same pot, heat a little oil. Add ginger, garlic, star anise, and cinnamon stick. Stir until fragrant.
  • Season & build flavor: Add beef back into the pot. Stir in light soy, dark soy, Shaoxing wine, and sugar. Mix well.
  • Simmer: Add water or beef stock. Bring to a boil, then lower heat and simmer gently for 1.5–2 hours, until beef is tender.
  • Add daikon: In the last 30–40 minutes, add daikon chunks. Continue simmering until daikon turns soft and translucent. Add in cornstarch slurry and heat till thickened. Add in spring onions.
  • Finish & serve: Adjust seasoning with salt and white pepper. Garnish with chopped spring onions. Serve hot with steamed rice.
