Ingredients
500gbeef brisket or shank
500gdaikon radish
3slicesfresh ginger
3clovesgarlic
2star anise
1cinnamon stick
2Tbsplight soy sauce
1Tbspdark soy sauce
1TbspShaoxing wine (optional)
1tspsugar
4-5water or beef stock
Salt & white pepper (to taste)
Spring onions or cilantro (for garnish)
1tbspCornstarch + 2 tbsp water
Directions
Blanch the beef: Place beef chunks in a pot of boiling water for 3–5 minutes to remove impurities. Drain and rinse.
Aromatic base: In the same pot, heat a little oil. Add ginger, garlic, star anise, and cinnamon stick. Stir until fragrant.
Season & build flavor: Add beef back into the pot. Stir in light soy, dark soy, Shaoxing wine, and sugar. Mix well.
Simmer: Add water or beef stock. Bring to a boil, then lower heat and simmer gently for 1.5–2 hours, until beef is tender.
Add daikon: In the last 30–40 minutes, add daikon chunks. Continue simmering until daikon turns soft and translucent. Add in cornstarch slurry and heat till thickened. Add in spring onions.
Finish & serve: Adjust seasoning with salt and white pepper. Garnish with chopped spring onions. Serve hot with steamed rice.
