Ingredients 200 g firm tofu, squeezed dry and crumbled Mirepoix1 onion1 carrot1 celery stick2 cloves garlic200 g tomato passata/ puree100 g chopped tomatoes¾ cup vegetable broth1 tbsp tomato paste2 tsp Italian herbs1 tsp sugar250 g pasta, cooked according to instructions Nutritional yeast Fresh basil Directions In a saucepan, sauté the mirepoix until soft with a dash of olive oil.Add garlic, tomato paste, tomato puree, chopped tomatoes, vegetable broth, dried herbs, and sugar.Simmer until thick and mix in the tofu.
