Heartiness from vegan ingredients, a sweet tang from the rich tomatoes, as well as an herbal kick.

Ingredients

  • 200 g firm tofu, squeezed dry and crumbled

  • Mirepoix

  • 1 onion

  • 1 carrot

  • 1 celery stick

  • 2 cloves garlic

  • 200 g tomato passata/ puree

  • 100 g chopped tomatoes

  • ¾ cup vegetable broth

  • 1 tbsp tomato paste

  • 2 tsp Italian herbs

  • 1 tsp   sugar

  • 250 g pasta, cooked according to instructions

  • Nutritional yeast

  • Fresh basil

Directions

  • In a saucepan, sauté the mirepoix until soft with a dash of olive oil.
  • Add garlic, tomato paste, tomato puree, chopped tomatoes, vegetable broth, dried herbs, and sugar.
  • Simmer until thick and mix in the tofu. Season with salt and black pepper to taste.
  • Serve with pasta and sprinkle with nutritional yeast and basil leaves.
