Ingredients

  • Tom Yam Waffles
  • Ingredient A
  • 3/4 cups milk of choice

  • 1 kaffir lime leaf

  • Ingredient B
  • 1 cups all-purpose flour

  • 1 teaspoon salt

  • 1 teaspoons baking powder

  • 2 tablespoons brown sugar

  • 1/3 cup butter of choice or vegetable oil

  • Tom Yam Prawns
  • 1/2 big onion, sliced

  • 2 cloves garlic, sliced

  • 5 bird’s eye chillies, sliced

  • 2 lemon grass, sliced

  • 2 tbsp tom yam paste

  • 1/2 biji tomato, cut into cubes

  • 4 kaffir lime leaf

  • Sustainably farmed prawns, deveined

  • water

  • Lime juice

  • Salt, to taste

Directions

  • Waffle
  • Heat ingredient A together till warm. Leave to steep for 15 mins. Leave to cool.
  • Mix all ingredients B and Ingredients A together. Cook in waffle maker for 6-8 mins.
  • Tom Yum Prawns
  • Sauté onion, garlic, bird’s eye chillies, lemongrass and kaffir lime leaves till fragrant.
  • Add in tomato and tom yam paste.
  • Add in prawns. Add water if it gets too dry.
  • Season to taste with lime juice and salt. Serve with waffles.
