Spicy eggplant, perfect with rice!

Ingredients

  • 3 -4 eggplants

  • Oil

  • Salt and black pepper

  • Sambal

  • 5 shallots

  • 2 garlic cloves

  • 1 inch ginger

  • 5 -8 dried chilies, soaked in hot water

  • Sugar and salt to taste

Directions

  • Coat the eggplant with oil and black pepper. Bake in an airfryer at a temperature of 160C for 15-20 minutes or until fully cooked.
  • Mix all the sambal ingredients with a little water. Fry in enough oil until the oil breaks. Season with salt and sugar to taste.
  • Serve eggplant with sambal.
