A flavourful easy dish for tempeh soy sauce noodles.

Ingredients

  • Choice of noodles, blanched

  • 1 block (230 g) tempeh

  • 4 dried shiitake mushrooms

  • 1.5 cups hot water (for soaking mushrooms)

  • 2 tsp gouchujang

  • 3 cloves garlic, minced

  • 1 teaspoon fresh ginger, minced

  • 1 shallot, finely minced

  • 2 dried chilies, deseeded & minced

  • 1 whole star-anise (optional)

  • 4 tablespoons light soy sauce

  • 2 tablespoons dark soy sauce

  • 2 tablespoons vegetable stock

  • 2 tablespoons dark brown sugar

Directions

  • In a pan, sauté garlic, ginger, shallots, and dried chilies until fragrant. Add gochujang, star anise, mushrooms, and tempeh. Friendly mix.
  • Add all the seasonings and let it simmer until it thickens.
  • Serve with noodles and a sprinkling of scallions.
