Ingredients
1Plant based puff pastry
Filling
600gtempeh
1tbspolive oil
1yellow onion
½ cup of grated carrots
4tbspflour
2tbspbalsamic vinegar
2tbsplight soy sauce
2tbspbrown sugar
2tspgarlic powder
2tspcili powder
A handful of dates, pitted
Directions
Mushroom sauce, Glazed carrots and brussel sprouts, to serve
For the wellington, put all filling ingredients into a food processor. Shape into a log and wrap with puff pastry. Cover with puff pastry lattice and bake in a preheated oven at 180C for 35-40mins or until the pastry is golden brown.
Serve Christmas Wellington with vegetables and mushroom sauce.
