Ingredients

  • 1 Plant based puff pastry

  • Filling
  • 600 g tempeh

  • 1 tbsp olive oil

  • 1 yellow onion

  • ½ cup of grated carrots

  • 4 tbsp flour

  • 2 tbsp balsamic vinegar

  • 2 tbsp light soy sauce

  • 2 tbsp brown sugar

  • 2 tsp garlic powder

  • 2 tsp cili powder

  • A handful of dates, pitted

Directions

  • Mushroom sauce, Glazed carrots and brussel sprouts, to serve
  • For the wellington, put all filling ingredients into a food processor. Shape into a log and wrap with puff pastry. Cover with puff pastry lattice and bake in a preheated oven at 180C for 35-40mins or until the pastry is golden brown.
  • Serve Christmas Wellington with vegetables and mushroom sauce.
