A soft and cold dessert best enjoyed on a hot day! Enjoy it with as much sugar as you like.

Ingredients

  • 3 cups soy milk

  • 3 tsp gelatin or 3 tsp agar powder

  • Sugar to taste

  • 2 pandan leaves

  • Ginger and brown sugar syrup
  • 1 cup water

  • 4 tbsp brown sugar or gula melaka

  • 1 small knob of ginger, peeled and thinly sliced

Directions

  • Mix 1 1/2 cup of soy milk with gelatine and leave to bloom. (If using agar powder, mix with heated soy milk)
  • Heat the remaining 1 1/2 cup of soy milk with the screwpine leaves and sugar. Bring to a simmer and remove pandan leaves.
  • Mix the warm soy milk with the gelatine mixture. Stir and heat slowly to ensure that the gelatine is well incorporated.
  • Pour into a bowl, let cool, and put in the fridge till the mixture sets.
  • Heat all ingredients for the brown sugar and ginger syrup till it thickens.
  • Serve tau foo fah with as much syrup as you want 🙂
