Chinese style of cooking sweet & sour fish.

Ingredients

  • Sea bass

  • Cornstarch – (smeared) on eggplant

  • Oil – for frying eggplant

  • Sauté Ingredients
  • 4 cloves garlic, sliced

  • 6 stalks of chili rice, sliced

  • 1 inch ginger, sliced

  • 1 lemongrass, chopped

  • Sauce Ingredients:

  • 2 tablespoons tomato sauce

  • 2 tablespoons chili sauce

  • 1 tablespoon oyster sauce

  • 1 tablespoon fish sauce

  • A little sesame oil

  • Other ingredients
  • 1 large onion, diced

  • 1 tomato, diced

  • 1/2 bell pepper, diced

  • Canned pineapple cubes

  • 3 kaffir lime leaves

  • Salt and sugar to taste

Directions

  • Gently rub the eggplant with a little salt and let it dry for a while.
  • Coat with corn flour and black pepper and fry crisp. Drain excess oil.
  • For the sauce, stir-fry the sauté ingredients until the smell rises. Add all the other ingredients and simmer until thickened and the vegetables are soft enough.
  • Pour over the fried eggplant and serve.
