Ingredients

  • 2 large waxy potatoes

  • 2 tablespoons oil

  • 1 tablespoon Sichuan peppercorns

  • Ingredients A
  • 1 inch ginger, julienned

  • 3 cloves garlic, minced

  • 4 dried red chilies, soaked for 15 mins

  • 2 green chillies, julienned

  • Ingredients B
  • 1 teaspoon light soy sauce

  • 1/2 teaspoon sugar

  • 1 teaspoon white vinegar

  • 1/2 teaspoon sesame oil

  • 1 tsp vegetable stock powder

  • 1 tsp vegetarian oyster sauce

  • Salt to taste

  • Garnish
  • 1 scallion (chopped)

Directions

  • Peel and shred the potatoes. Leave them soaking in water while preparing other ingredients. Dry them on kitchen towels before using.
  • In a wok heat oil and sichuan peppercorns. Heat till fragrant. Remove peppercorns.
  • Add in ingredients A and sauté till fragrant. Add in potatoes and sauté on high heat for 30 sec.
  • Add in ingredients B and sauté for another 1 min (Depending on the size of the shredded potatoes, the potatoes should still be a little crunchy when serving)
