Spicy Sambal Couscous 0 from 0 votes Course: MainCuisine: AsianDifficulty: Easy Servings3servingsPrep time20minutesCooking time15minutes Ingredients 300 g button mushroomsIngredient B ½ onion sliced3 cloves garlic chopped1 tbsp cili paste Sugar and salt to tasteIngredients C1 cup vegetable stock, boiling hot1 cup couscous ½ teaspoon kosher salt2 tablespoons extra-virgin olive oilServing A handful of mint leaves and coriander leaves, chopped Tomatoes, cucumbers, cubed Directions Mix all of ingredients C together and cover. Leave to sit for 5-10 mins. Fluff with fork and stir in mint, coriander, tomatoes and cucumber.Sauté ingredients B till fragrant and stir in mushrooms.Serve spicy mushrooms with couscous.
