Simple and healthy pasta! Creamy pumpkin with a hint of spice.

Ingredients

  • 2 tablespoons olive oil

  • 3 tablespoons minced garlic

  • 1 chili, cut in half

  • 100 ml vegetable broth

  • 300 ml almond milk

  • Salt and black pepper, to taste

  • Pumpkin cut into large cubes

  • peas

  • Pasta of choice

Directions

  • Sauté garlic and chilies with oil until fragrant.
  • Add pumpkin and vegetable broth. Let it simmer until the pumpkin is half cooked.
  • Add almond milk and simmer again until it thickens and the pumpkin is fully cooked.
  • Add peas and season with enough salt and black pepper.
  • Mix with the blanched pasta.
