Spiced Mango Coconut Cake

Ingredients
Ingredient A
240mllight coconut milk
1/4cupmango puree
1teaspoonwhite vinegar or apple cider
1/3cupsugar
1/4cupoil
1teaspoonvanilla extract
Ingredients B
1 1/2cups(190 g) all purpose flour use more if needed
2teaspoonsbaking powder
1/4teaspoonbaking soda
1/2teaspoonsalt
1tspchilli powder
Ingredients C
1 1/2cups(355 ml) mango puree/pulp
1bird’s eye chilli
1tspsalt
1teaspooncornstarch starch + 2 tsp water
Directions
In a mixer or large bowl, mix all ingredients A till well combined.
Add in Ingredients B that have been sifted together. Pour batter into a buttered 7 inch pan and bake in a preheated oven at 185C for 30 mins or till it is cooked through. Remove and leave to cool.
For the drizzle, heat mango puree with bird’s eye chilli and salt. Remove bird’s eye chilli and add in cornstarch mixture and cook till thickened. Pour over cooled mango cake.
