Ingredients

  • Ingredient A
  • 240 ml light coconut milk

  • 1/4 cup mango puree

  • 1 teaspoon white vinegar or apple cider

  • 1/3 cup sugar

  • 1/4 cup oil

  • 1 teaspoon vanilla extract

  • Ingredients B
  • 1 1/2 cups (190 g) all purpose flour use more if needed

  • 2 teaspoons baking powder

  • 1/4 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 tsp chilli powder

  • Ingredients C
  • 1 1/2 cups (355 ml) mango puree/pulp

  • 1 bird’s eye chilli

  • 1 tsp salt

  • 1 teaspoon cornstarch starch + 2 tsp water

Directions

  • In a mixer or large bowl, mix all ingredients A till well combined.
  • Add in Ingredients B that have been sifted together. Pour batter into a buttered 7 inch pan and bake in a preheated oven at 185C for 30 mins or till it is cooked through. Remove and leave to cool.
  • For the drizzle, heat mango puree with bird’s eye chilli and salt. Remove bird’s eye chilli and add in cornstarch mixture and cook till thickened. Pour over cooled mango cake.
