Chinese inspired soy mushroom rice that is an easy, delicious dish filled with flavours.
Ingredients
2tablespoonsvegan butter
1yellow onion, chopped
2clovesgarlic
1 1/2cupsbasmati rice
3/4cupsoy milk
1 1/2cupsvegetable broth
A pinch of salt
Black pepper
Onions, thinly sliced
200gchoice mushrooms
3clovesgarlic, chopped
1inch ginger, thinly sliced
3tablespoonsvegetable stock
1tablespoonliquid soy sauce
1tablespoonsesame oil
1teaspooncaster sugar
1teaspoonvegetarian oyster sauce
Sesame seeds and scallions to serve
Directions
For rice, sauté onion and garlic with butter. Add the rice and pour in the soy milk and vegetable broth that have been heated together. Cover and bake in a preheated oven at 180C for 17 minutes. Mix with the onion.
For mushrooms, saute garlic and ginger with oil until fragrant. Add all the ingredients and let it thicken.
Serve the mushrooms with rice and a sprinkling of scallions and sesame seeds.
