Chinese inspired soy mushroom rice that is an easy, delicious dish filled with flavours.

Ingredients

  • 2 tablespoons vegan butter

  • 1 yellow onion, chopped

  • 2 cloves garlic

  • 1 1/2 cups basmati rice

  • 3/4 cup soy milk

  • 1 1/2 cups vegetable broth

  • A pinch of salt

  • Black pepper

  • Onions, thinly sliced

  • 200 g choice mushrooms

  • 3 cloves garlic, chopped

  • 1 inch ginger, thinly sliced

  • 3 tablespoons vegetable stock

  • 1 tablespoon liquid soy sauce

  • 1 tablespoon sesame oil

  • 1 teaspoon caster sugar

  • 1 teaspoon vegetarian oyster sauce

  • Sesame seeds and scallions to serve

Directions

  • For rice, sauté onion and garlic with butter. Add the rice and pour in the soy milk and vegetable broth that have been heated together. Cover and bake in a preheated oven at 180C for 17 minutes. Mix with the onion.
  • For mushrooms, saute garlic and ginger with oil until fragrant. Add all the ingredients and let it thicken.
  • Serve the mushrooms with rice and a sprinkling of scallions and sesame seeds.
