Ingredients

  • For Falafel
  • 1 cup dried chickpeas, soaked overnight (don’t use canned chickpeas)

  • 1/2 cup onion, roughly chopped

  • 1/2 cup cilantro

  • 1 small bird’s eye chilly

  • 1 tbsp sambal of choice

  • 3 garlic cloves

  • 1 tsp cumin

  • 1 tsp cili powder

  • 1 tsp salt

  • 1/2 tsp cardamom

  • 1/4 tsp black pepper

Directions

  • In a food processor, place all falafel ingredients and blitz till smooth.
  • Form balls and leave to rest.
  • Coat with oil and cook in an oven for 15 mins at 180C.
  • Deep fry in oil at 175C till golden brown.
  • Serve in a wrap with vegetable of choice and sambal mayo.
