Soft asian milk bread with sweet red beans.

Ingredients

  • ingredients A
  • 100 mL warm water

  • 100 mL milk of choice

  • 50 mL vegetable oil

  • 2 1/4 cups all-purpose flour

  • 2 tbsp sugar

  • A pinch of salt

  • 1 ¼ teaspoons dried yeast

  • ingredients B
  • 110 g red beans

  • 45 g sugar

  • 30 g gula melaka

  • 40 g vegan butter

Directions

  • Cook red beans with pandan leaves in a pressure cooker until soft enough. Strain and put in a food processor with caster sugar, melaka sugar and vegan butter. Blend until smooth.
  • For the bread, mix all ingredients A and let it cool for a while. Mix with ingredient b until a soft dough is formed. Leave to rest for 1 hour covered with a damp cloth.
  • Roll and apply red bean paste. Roll up and put in a baking pan.
  • Bake dough in a preheated oven at 175C for 35-40 min or until fully cooked.
