A savoury pastry, just like a tart or a pie.


  • For the Pie Crust
  • 1 cup + 2 Tbsp All Purpose Flour (145g)

  • ½ tsp Salt

  • 1 Tbsp White Granulated Sugar

  • ¼ cup Coconut Oil (55g) Solid

  • 4 Tbsp Ice Water

  • For the Filling
  • 400 g Firm Tofu

  • 1 Tbsp Cornstarch

  • 2 Tbsp Nutritional Yeast

  • ¼ tsp Turmeric

  • ½ tsp Onion Powder

  • ½ tsp Garlic Powder

  • 1 tsp nutmeg

  • ¾ Salt

  • 2 Tbsp Soy Milk

  • 1 Tbsp vegan butter

  • 1 Medium Onion White, Yellow or Brown, Chopped

  • 1 tsp Crushed Garlic

  • ½ cup Oyster Mushrooms (240g) Sliced

  • 3 cups Baby Spinach (90g) Chopped


  • Put all the pie crust ingredients in a food processor. Mix until you get a soft dough. Let the dough rest for 20 min.
  • Roll out the dough and place it in a tart pan. Prick the base of the tart and bake with weights (blind bake) for 15 minutes in a preheated oven at 180C or until browned.
  • Meanwhile, sauté onion and garlic until fragrant. Add oyster mushrooms and stir-fry for a while.
  • For the quiche filling, put all the filling ingredients in a food processor and mix well. Using a spatula, mix the filling with the stir-fry ingredients. Pour into the pie crust that has been baked.
  • Bake for 15-20 minutes.
