Ingredients

  • Ingredients A
  • 125 g Plain Flour

  • 1 tsp Instant Yeast

  • 100 ml Warm Water

  • Ingredients B
  • 160 g Pumpkin

  • 160 g Self-raising Flour

  • 125 g Sugar

  • 12 g Baking Powder

  • 80 g Coconut Milk

  • 15 g Veg Oil

  • Pinch Salt

Directions

  • Mix all ingredients A together and leave to rest for 45 mins.
  • In the meantime, mash the pumpkin and mix with sugar. Sieve the mixture and mix with self-raising flour and baking powder that has been sifted together. Add coconut milk and mix well. Fold in fermented Ingredient A. Finally, fold in vegetable oil.
  • Pour into a lined muffin tray and steam for 15 minutes and turn off the fire. Leave for 5 mins before removing from the steamer.
