1tspInstant Yeast
100mlWarm Water
Ingredients B
160gPumpkin
160gSelf-raising Flour
125gSugar
12gBaking Powder
80gCoconut Milk
15gVeg Oil

Directions
Mix all ingredients A together and leave to rest for 45 mins.
In the meantime, mash the pumpkin and mix with sugar. Sieve the mixture and mix with self-raising flour and baking powder that has been sifted together. Add coconut milk and mix well. Fold in fermented Ingredient A. Finally, fold in vegetable oil.
Pour into a lined muffin tray and steam for 15 minutes and turn off the fire. Leave for 5 mins before removing from the steamer.
