Ingredients

  • 500 g pumpkin

  • 2 lemongrass, smashed

  • 1 cup diluted coconut milk (½ cup coconut milk + ½ cup water)

  • 3 cups coconut milk

  • To be pounded
  • 1 tbsp dried shrimps (optional can be replaced with 1 tbsp nutritional yeast)

  • 3 shallots

  • ½ inch fresh turmeric/ 1 tsp turmeric powder

  • 2 green bird’s eye chillies

Directions

  • In a pot place, diluted coconut milk, pounded ingredients, pumpkin and lemongrass. Bring to a boil and let simmer till the pumpkin is soft enough.
  • Add in coconut milk and season with sugar and salt to taste.
