Just in case you had leftover pumpkins 🙂 Pumpkin Cooked in Coconut Gravy 0 from 0 votes Course: MainCuisine: AsianDifficulty: Easy Servings2servingsPrep time9minutesCooking time20minutes Ingredients 500 g pumpkin2 lemongrass, smashed1 cup diluted coconut milk (½ cup coconut milk + ½ cup water)3 cups coconut milkTo be pounded1 tbsp dried shrimps (optional can be replaced with 1 tbsp nutritional yeast)3 shallots ½ inch fresh turmeric/ 1 tsp turmeric powder2 green bird’s eye chillies Directions In a pot place, diluted coconut milk, pounded ingredients, pumpkin and lemongrass.
