Ingredients

  • 300 g pumpkin, sliced

  • 300 ml milk of choice

  • 50 g sugar

  • A pinch of salt

  • 60 g cornstarch

  • Shredded coconut

  • Salt

Directions

  • Steam pumpkin till soft.
  • Put cooked pumpkin, milk, sugar, salt and cornstarch into a blender and blitz till smooth.
  • Cook mixture in a nonstick pan over low heat till thickens.
  • Pour into a glass baking tray and chill for at least 3 hours.
  • Take out and cut into cubes. Toss with coconut and salt mixture.
