Ingredients

  • 1 kg potatoes, peeled and cut into large cubes

  • Turmeric powder and salt to taste

  • Spice Paste
  • 6 cloves garlic

  • 8 small red onions

  • 8 dried chillies, soaked in hot water for 15 mins

  • 5 red chillies

  • 3 candlenuts

  • Other
  • 1 lemongrass, smashed

  • 1 inch galanggal, julienned

  • 3 bay leaf

  • 1 tsp vegetable stock powder

  • 1.5 tsp salt

  • 2 tsp sugar

Directions

  • In a large bowl, toss potatoes with oil, turmeric powder and salt. Air fry at 200°C for 10 mins or till crispy.
  • In a wok, heat enough oil and sauté spice paste till chili oil separates. Add in lemongrass, galanggal, bay leaf, vegetable stock and some water. Leave to simmer.
  • Toss with potatoes and stinky beans. Season to taste with salt and sugar.
