Ingredients

  • 2 tbsp (30g) Vegan Butter, melted

  • 3 tbsp (45g) Light Brown Sugar

  • 2-3 slices Pineapple from can

  • For the Cake:
  • Ingredients A
  • 95 g All Purpose Flour

  • ½ tsp Baking Soda

  • ½ tsp Salt

  • Ingredients B
  • ¼ cup Soy Milk

  • 2 tbsp (30ml) orange juice

  • 1 tsp Vanilla Extract

  • 3 tbsp (45ml) Canola Oil

  • 1/2 cup (100g) White Granulated Sugar

  • 1 tbsp Distilled White Vinegar or Apple Cider Vinegar

  • Zest from 1 orange

Directions

  • For cake batter, sift all ingredients A together.
  • In a separate bowl, mix all ingredients B together till smooth. Mix in ingredients A and fold in orange zest.
  • In a lined cake pan, spread melted vegan butter and sprinkle with brown sugar. Lay Pineapple slices. Pour in cake batter and bake in a preheated oven at 180C for 30-40 mins or till cooked through.
