Plant Based Upside Down Pineapple Orange Cake

Ingredients
2tbsp(30g) Vegan Butter, melted
3tbsp(45g) Light Brown Sugar
2-3slicesPineapple from can
For the Cake:
Ingredients A
95gAll Purpose Flour
½ tspBaking Soda
½ tspSalt
Ingredients B
¼cupSoy Milk
2tbsp(30ml) orange juice
1tspVanilla Extract
3tbsp(45ml) Canola Oil
1/2cup(100g) White Granulated Sugar
1tbspDistilled White Vinegar or Apple Cider Vinegar
Zest from 1 orange
Directions
For cake batter, sift all ingredients A together.
In a separate bowl, mix all ingredients B together till smooth. Mix in ingredients A and fold in orange zest.
In a lined cake pan, spread melted vegan butter and sprinkle with brown sugar. Lay Pineapple slices. Pour in cake batter and bake in a preheated oven at 180C for 30-40 mins or till cooked through.
