A quick yet delicious vegan pasta guaranteed to put a smile on your face!

Ingredients

  • cheese sauce
  • 180 ml coconut milk

  • 3 tbsp Nutritional yeast

  • 2 tablespoons sweet potato/corn flour

  • 1 tablespoon onion powder

  • 1 tablespoon garlic powder

  • Salt and paprika, to taste

  • Spinach

  • Pumpkin, cut into cubes and fried dry

  • garlic

  • Pasta of choice

Directions

  • In a small pot, mix all the ingredients and heat until thick.
  • In a pan, sauté the garlic until fragrant. Add spinach and pumpkin. Mix until the spinach softens.
  • Put the spinach and pumpkin mixture in the baking pan. Mix in the pasta and pour the cheese sauce on top and bake in the oven at 180C for 15 min.
