Pandan bread with dates! Have it as a snack, or for breakfast, goes especially well with butter!

Ingredients

  • 380 g bread flour

  • 180 ml almond milk, warm

  • 3 pandan ties

  • 100 g sugar

  • 50 g vegan butter, room temperature

  • salt

  • 2 teaspoons vanilla essence

  • 20 g yeast

  • A handful of dates, roughly sliced

  • Grated melaka sugar

  • Melaka sugar butterscotch

  • 50 g Melaka sugar

  • 100 ml coconut milk

  • 75 g vegan butter

Directions

  • In a Panasonic Blender, add pandan leaves and almond milk. Grind and Filter.
  • Mix yeast with pandan, almond milk, and sugar. Let it sit for a while.
  • Using your fingertips, sift the flour together with the vegan butter.
  • Pour in the mixture of yeast, vanilla essence, and salt. Mix until it forms a dough. Let it rest for 1 hour covered with a damp cloth.
  • Roll it back to a rectangular shape with a thickness of 1 inch. Apply melted butter, Melaka sugar, and dates. Roll up and cut crosswise. Arrange in a baking tray and let it rise for another 45 min.
  • Bake in a Panasonic Cubie Oven preheated to 180 C for 25 mins or until browned.
  • For Melaka sugar butterscotch, heat all the ingredients until they thicken and pour over the baked bread.
