Ingredients

  • Pandan emulco

  • 300 g fermented dough

  • 100 grams sugar

  • 1/8 teaspoon lye water

  • 19 g water

  • 4 g vegetable oil

  • 112 grams flour

  • 1 teaspoons (5 grams) baking powder

  • 1 tablespoons (9 grams) cornstarch

Directions

  • Mix sugar, fermented dough, and lye water. Use your hands to knead until sugar is completely dissolved.
  • Add other ingredients. Knead together until it becomes a soft, smooth dough.
  • Divide dough into two. Mix one dough with pandan emulco.
  • Roll out both doughs to 1 cm thickness. Cut into small circles using a cookie cutter. Place the 6 circles on top of one another alternating the colour of the doughs. Press in the centre with a chopstick.
  • Place in a steamer rack and leave to rise for 30 mins. Steam at high heat for 15 mins . Off fire and leave for another 5 mins.
