Ingredients 1 tbsp olive oil2 garlic cloves, minced1 onion, finely chopped2 zucchinis halved lengthwise and cut into sliced 0.8cm / 1/3″ slices1 red capsicum/bell pepper, halved and sliced1 cup corn* (frozen or canned)1 broccoli, broken into bite-size florets250 g / 0.5lb ziti/penne , or other short pasta (Note 1)800 g / 28 oz crushed tomato1.5 cups / 375 ml vegetable or chicken broth2 tbsp tomato paste1 tbsp Italian herb mix (or other dried herbs)1 tsp garlic powder1/2 tsp red pepper flakes (chilli flakes, adjust spiciness to taste)1.5 tsp salt0.5 tsp black pepper Directions Sauté garlic and onion until fragrant. Add zucchini, bell pepper, and all other ingredients except pasta and broccoli.When it starts to boil, add the pasta and broccoli and cover, and let it simmer for 6 min.Uncover and continue to cook, stirring, until the pasta is fully cooked and all the liquid has been absorbed.Ready to serve.
