Ingredients

  • Ingredients A
  • 4 tablespoon canola oil or other neutral-flavoured oil

  • 1 tablespoon whole cumin seeds

  • 8 cloves garlic crushed

  • Ingredients B
  • 300 g tomatoes, chopped

  • 2 tablespoon freshly grated ginger

  • 2 tablespoon ground coriander

  • 1 teaspoon turmeric

  • 1 teaspoon sea salt

  • 1 tsp cili powder

  • 2 bird’s eye chillies

  • 4 cups water

  • 1 cup mung beans picked over for stones and well rinsed

  • Ingredients C
  • 14 oz can coconut milk

  • 1-2 medium limes juiced

  • 1/2 cup fresh cilantro chopped

Directions

  • Sauté ingredients A till fragrant.
  • Add in ingredients B and cook covered on medium pressure for 30 mins or till beans are tender.
  • Add in ingredients C and heat through. Season with salt and sugar to taste.
