Ingredients

  • Filling
  • 450 g dried red beans

  • 3 1/2 cups water

  • 5 grams dried orange peel

  • 1 cup vegetable oil (250 ml)

  • 190 grams rock sugar

  • A pinch of salt

  • Ingredient A
  • 2 tbsp bread flour

  • 2 tbsp water

  • 4 tbsp milk

  • Ingredient B
  • 70 grams sugar

  • 120 ml milk

  • 1 tbsp yeast

  • Ingredient C
  • 320 grams bread flour

  • 2 tbsp matcha powder

  • 1 tsp salt

  • Other
  • 1 egg

  • 3 tbsp butter

Directions

  • For filling, cook beans with water in a pressure cooker for 45 mins. Drain and leave to cool before blitzing into a puree. In a wok, heat oil, red bean puree, sugar and salt together until it becomes thick. Leave to cool. Divide and shape into 25g balls.
  • Heat ingredients A till thickened. Set aside.
  • Mix ingredients B together and set aside.
  • Sift ingredients C together. Add in ingredients B and egg. Mix well. Add ingredients A which has been cooled down. Mix well.
  • Once you get a soft dough, continue kneading adding 1 tbsp of butter at a time. Leave to rise for 45 mins with a damp cloth.
  • Punch down and divide to 9 balls of 56g. Flatten and wrap red bean filling. Place in a greased baking tray. And cover with damp cloth and leave to rise for another 30 mins or till double their original size.
  • Steam for 15 mins and then turn off heat and leave for another 5 minutes.
