Why not eat some plant based truffles? Not only does it make for a yummy treat thats good for the planet, Potatoes also have a significantly higher potassium content than any of the other foods and a much higher Vitamin C content.

Ingredients

  • 300 g potatoes

  • 1 cup dark chocolate couverture

  • 1/2 teaspoon vanilla

  • 1/2 cup topping for rolling (cocoa powder, coconut flakes, powdered sugar or finely chopped nuts)

Directions

  • In a preheated oven, bake potatoes at 180°C for 35 mins or till cooked through.
  • Spoon out the filling of the potatoes and mash to get about ½ cup mash. Leave to cool.
  • In a bain-marie, melt dark chocolate, mix with mashed potatoes and vanilla. Stir till the mixture starts to firm up.
  • Place in the fridge for 30 mins or till hard enough to scoop mixture and shape into balls.
  • Roll shaped balls into toppings of choice. Leave to cool in the fridge.
