Ingredients

  • Lotus Paste

  • 300 g fermented dough

  • 100 grams sugar

  • 1/8 teaspoon lye water

  • 19 g water

  • 4 g vegetable oil

  • 112 grams flour

  • 1 teaspoons (5 grams) baking powder

  • 1 tablespoons (9 grams) cornstarch

Directions

  • Mix sugar, fermented dough, and lye water. Use your hands to knead until sugar is
  • Add other ingredients. Knead together until it becomes a soft, smooth dough.
  • Divide into 14 pieces. Flatten the dough and wrap 30g of lotus paste with the dough.
  • Place in a steamer rack and leave to rise for 30 mins. Steam at high heat for 15 mins . Off fire and leave for another 5 mins.
