Ingredients

  • Ingredients A
  • 1/2 cup (113g) milk of choice

  • 1 tablespoon (9g) dried yeast

  • 1/4 cup (50g) caster sugar

  • Ingredients B
  • 4 tablespoons (57g) unsalted butter of choice, softened

  • 1 teaspoon (6g) salt

  • 2 1/2 cups (300g) bread flour

  • Other
  • 1 large sustainably farmed egg (optional)

  • Date Jam/ Paste

  • Egg Wash or milk to brush

Directions

  • Mix all ingredients A and leave to stand for 5 minutes.
  • Rub in all ingredients B together till you get fine crumbs.
  • Mix ingredients A, B and egg (if using) till you get a soft dough. Knead for 10 mins. Cover with a damp cloth and leave to rise for 1 hour.
  • Divide dough into four. Roll out into rectangular sheets of 1 inch thick. Fill with date paste and roll as per video.
  • Place into a round cake pan, cover with a damp cloth and leave to rise for another 45 mins.
  • Brush with eggwash or milk and bake in a preheated oven at 180C for 30 minutes or cooked through.
