Ingredients

  • 500 g peanuts

  • 3 tbsp chilli paste

  • 1 slice dried tamarind (1/3 cup tamarind juice)

  • Gula melaka and salt, to taste

  • Aromatics
  • 7 shallots

  • 3 cloves garlic

  • 1 inch ginger

  • 1 inch galanggal

  • 1 lemongrass

Directions

  • Roast peanuts in airfryer at 160C for 15-20 min or till golden brown. Let cool and roughly blitz in a food processor.
  • In a wok, sauter all the aromatics. Blitz in a food processor till you get a paste. (Add some water if it gets stuck)
  • In a wok, sauté the chilli paste with some oil till the chilli oil separates. Add in the aromatic paste, adequate water, peanuts, tamarind slice, gula melaka and salt.
  • Simmer till the oil surfaces.
