Remaining plant based during festive periods don’t mean that you gotta give up your favourite foods all together! Some of my favourite festive peanut sauce which goes well with noodles too!!

Ingredients
500gpeanuts
3tbspchilli paste
1slicedried tamarind (1/3 cup tamarind juice)
Gula melaka and salt, to taste
Aromatics
7shallots
3clovesgarlic
1inch ginger
1inch galanggal
1lemongrass
Directions
Roast peanuts in airfryer at 160C for 15-20 min or till golden brown. Let cool and roughly blitz in a food processor.
In a wok, sauter all the aromatics. Blitz in a food processor till you get a paste. (Add some water if it gets stuck)
In a wok, sauté the chilli paste with some oil till the chilli oil separates. Add in the aromatic paste, adequate water, peanuts, tamarind slice, gula melaka and salt.
