Ingredients

  • Green Coriander Rice
  • 1 cup basmati rice, washed

  • 2 tablespoons oil

  • 1 pinch turmeric powder

  • 1 medium sized potato – peeled and chopped

  • 1/3 cup green peas – fresh or frozen

  • 1.5 cups water

  • Salt, to taste

  • Dry Spices
  • 1 bay leaf

  • 2-3 cloves

  • 1/2 inch cinnamon

  • 2 green cardamoms

  • 1 onion, thinly sliced

  • Spice Paste
  • 1/2 cup chopped coriander leaves

  • 2 green bird’s eye chillies

  • 1/2 inch ginger

  • 2 tablespoon coconut milk

  • 3 garlic

  • 1/2 tsp cumin seeds

  • 1/2 tsp fennel seeds

Directions

  • Grind all spice paste ingredients till smooth. Add a little water if needed.
  • In a wok sauter dry spices in a little oil till fragrant. Add in spice paste and sauter further till fragrant.
  • Transfer into a rice cooker and add all other ingredients. Cook as per usual.
