Ingredients

  • Green Bean Paste
  • 200 g dried green beans

  • 2 cups water

  • Mandarin peels

  • 1/2 cup vegetable oil

  • 90 g sugar

  • Mochi Coating
  • 1/4 cup glutinous rice flour, toasted

  • Mochi Dough
  • 1 1/2 cups glutinous rice flour

  • 1/4 cup cornstarch

  • 1/4 cup caster sugar

  • 1 cup water

  • 1/2 cup coconut milk

  • 2 tablespoons coconut oil

  • 1 tsp salt

Directions

  • Green Bean Paste
  • Place green beans, mandarin peel and water in a pressure cooker. Cook for about 30 mins or till beans are tender.
  • Drain and blitz in a food processor with oil and sugar. Cook in a non-stick pan till dry. Leave to cool completely.
  • Form small balls of 20g.
  • Mochi Dough
  • Mix all dough ingredients and pour into a heatproof tray.
  • Steam for 15 mins and leave to cool completely.
  • Cut dough into squares. Place green bean balls in the centre of each square and shape into balls.
  • Coat with coating.
