This shiitake mushrooms with glass noodles is another quick summer dish that you can whip up without too much time at the stove.

Ingredients

  • A handful of shitake mushrooms, roughly sliced

  • Glass noodles, soaked for 15 min

  • Enough black pepper

  • 5 cloves garlic, chopped

  • 7 coriander leaves

  • 2 inches ginger, sliced

  • 1 tablespoon oil

  • Optional vegetables (ab use carrots and snow peas)

  • 1 spring onion

  • Vegetable soup

  • Seasoning

  • 1 tablespoon soy sauce

  • 2 tablespoons vegetarian oyster sauce

  • ½ teaspoon thick soy sauce

  • 1 tablespoon sugar

  • 1 teaspoon peanut butter

  • 2 teaspoons chili oil

Directions

  • Mix all the seasonings until well mixed. Mix with the softened glass noodles.
  • Heat the claypot and fry the onion, coriander stalks and ginger in the oil until the smell rises.
  • Add mushrooms and a little vegetable broth. Cook until the mushrooms soften.
  • Add the glass noodles and selected vegetables and cook with the claypot closed.
  • Sprinkle spring onions and ready to serve.
