Ingredients

  • 140 g dried shrimp, soaked

  • Spice paste (blended)

  • 90 g shallots, peeled

  • 20 g garlic, peeled

  • 20 g chili paste

  • 1/2 tbsp tamarind paste

  • Sugar and salt, to taste

Directions

  • Blitz dried prawns to a coarse texture. Add some water before blending. Set aside.
  • Heat wok and add oil (enough to cover blended garlic and shallots paste)
  • In medium heat, stir-fry garlic and shallots paste until fragrant.
  • Add chili paste and again stir-fry until aromatic.
  • Finally add blended dried shrimp and stir-fry
  • Add sugar and tamarind peels about 5 minutes later
  • Fry until it is very dry.
  • Transfer dried shrimp sambal to a tray and leave to cool
  • Once cool, store in a clean, dry and air-tight jar.
