Feeling down and under the weather? This congee is sure to fill you up with all warmth you need!

Ingredients

  • 1/2 cup jasmine rice

  • 6 Dried shitake mushrooms

  • 2 cups hot water

  • 2 1/2 cups vegetable broth

  • 2 inches Ginger, sliced

  • 2 cloves Garlic, chopped

  • 1 small spoon of salt

  • 7 Dates, seeded and sliced

Directions

  • Soak shitake mushrooms in hot water until soft. Recommended to soak overnight.
  • In a pot, saute ginger and garlic until fragrant. Add all other ingredients. Let it boil and simmer until it becomes porridge.
  • Serve with toppings of choice.
