Pumpkin curry is indeed Abang Brian’s favourite to eat with extra rice!

Ingredients

  • 1 tablespoon vegetable oil

  • Ingredients B
  • 1 large onion, diced

  • 1 bell pepper, cut into small cubes

  • Ingredients A
  • 1 tablespoon chili powder

  • 2 tablespoons curry powder

  • 1 tablespoon tomato puree

  • 1 tablespoon minced garlic

  • 1 tablespoon minced ginger

  • 1 teaspoon paprika

  • 300 g pumpkin, peeled and cut into large cubes

  • 200 ml coconut milk

  • 125 ml vegetable broth

  • Salt and black pepper, to taste

Directions

  • Saute ingredient A until the smell rises.
  • Add Ingredient B and fry until crisp.
  • Add pumpkin ½ coconut milk and vegetable broth. Simmer until the pumpkin is soft.
  • Add the remaining coconut milk. Season with salt, pepper and sugar to taste.
