Ingredients

  • Noodles of choice, blanched

  • Vegan eggs ( refer to recipe before)

  • 2 -3 garlic, minced

  • 3/4 cups chopped scallion

  • A handful of fresh shiitake mushrooms, sliced

  • 1/2 carrot, cut into small cubes

  • 1/4 cup cannellini beans, crushed (or replace with baked beans from can)

  • 1/2 cup water

  • Seasonings
  • 1 tbsp chilli paste

  • 1 tbsp soy sauce

  • 1 tbsp vegan oyster sauce

  • 1 tbsp sesame oil

  • 1/2 tsp salt or to taste

  • 1/2 tsp sugar

  • 1/4 tsp pepper

  • 3 tbsp water

Directions

  • Sauté garlic and scallion in oil until fragrant.
  • Add in seasonings, mushroom and carrots. Cook till carrots are tender. Add water if it gets too dry.
  • Pour in additional ½ cup of water and crushed cannellini beans and cook till the sauce thickens.
  • Serve with blanched noodles.
