Crushed Cannellini Beans with Noodles

Ingredients
Noodles of choice, blanched
Vegan eggs ( refer to recipe before)
2-3 garlic, minced
3/4cupschopped scallion
A handful of fresh shiitake mushrooms, sliced
1/2carrot, cut into small cubes
1/4cupcannellini beans, crushed (or replace with baked beans from can)
1/2cupwater
Seasonings
1tbspchilli paste
1tbspsoy sauce
1tbspvegan oyster sauce
1tbspsesame oil
1/2tspsalt or to taste
1/2tspsugar
1/4tsppepper
3tbspwater
Directions
Sauté garlic and scallion in oil until fragrant.
Add in seasonings, mushroom and carrots. Cook till carrots are tender. Add water if it gets too dry.
Pour in additional ½ cup of water and crushed cannellini beans and cook till the sauce thickens.
