Crispy and delicious. You won’t even know you are eating insects.

Ingredients

  • Ingredients A
  • 500 grams wheat flour

  • 600 ml water

  • ½ teaspoon turmeric powder

  • 1 teaspoon salt

  • 1 teaspoon caster sugar

  • 1 teaspoon bicarbonate of soda

  • Ingredients B
  • 2 tablespoons roasted larvae

  • 1 large onion, thinly sliced

  • 3 small shallots, thinly sliced

  • 2 stalks of red chili, thinly sliced

  • 1 carrot, thinly sliced

  • A few green onions, roughly chopped

Directions

  • In a mixer/blender, mix all ingredients A until well incorporated.
  • Mix in all ingredients B.
  • Heat the oil until it reaches a temperature of 175C.
  • Pour 1 spoonful of the mixture in the oil and let it cook until crisp. Repeat until the mixture is used up. You can cook several ladlefuls of batter at the same time but make sure not to overfill the wok.
