Creamy Carrot Pesto Pasta 0 from 0 votes Course: MainCuisine: WesternDifficulty: Easy Servings2servingsPrep time10minutesCooking time20minutes Ingredients 200 g pasta of choice, blanched1 yellow onion, chopped5 cloves garlic, chopped2 tbsp olive oil2 cups carrots, sliced2 bird’s eye chillies2 cups water1/4 cup raw cashews1/4 teaspoon salt1/4 teaspoon pepper3 tablespoons White Miso Paste (or 1 tbsp vegetable stock powder) Directions In a pan, sauté onion in oil till soft and translucent.Add in garlic, bird’s eye chillies, carrots and cashews.Add water and leave to simmer till carrots are tender.Leave to cool and blitz till smooth.
