Ingredients

  • 200 g pasta of choice, blanched

  • 1 yellow onion, chopped

  • 5 cloves garlic, chopped

  • 2 tbsp olive oil

  • 2 cups carrots, sliced

  • 2 bird’s eye chillies

  • 2 cups water

  • 1/4 cup raw cashews

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper

  • 3 tablespoons White Miso Paste (or 1 tbsp vegetable stock powder)

Directions

  • In a pan, sauté onion in oil till soft and translucent.
  • Add in garlic, bird’s eye chillies, carrots and cashews.
  • Add water and leave to simmer till carrots are tender.
  • Leave to cool and blitz till smooth. Toss with pasta of choice.
